sharp and shiny - Knife maintenance and sharpening

Dive down the rabbit hole of Whetstone work and chefs knife management

Book in advance, with new dates available each month - or subscribe to the mailing list if you missed out on dates first time round

this course is very much in its infancy - if you fancy coming along to be guinea pigs, we'd love to have you in the workshop (you're still guaranteed to walk away with a knife, no spoons here!)

Give your old knives a new lease on life, in just one day!

This is a course that we've wanted to host for a while now. Maintaining your knife is a big and enjoyable part of owning it, but is something we only have time to briefly touch on in our other two day knife making courses. Done in a day, the sharpening/maintenance course is much more open ended compared to our other courses  - if you've got old knives that need looking at, bring them in. If you've got a whetstone that's stopped working, we'll flatten it. If you've got a nephew that thought one of your custom blades would make an excellent spade, disown him! But seriously, we'll fix those problems, and teach you how while we do it!

No two knives are ever the same, and as such, every course will be a little different depending on what each knife requires - please be patient if the majority of the group would like to look at an aspect of knife care that you're not specifically interested in. That said, there will be elements of knife care that we address in every course, regardless of what people have brought with them, specifically regarding whetstone work.

As such, this course would make an excellent pick up prior to going on the san mai knife making experience. A lot of the skills we talk about and start to try out here, would then be developed and properly put into practise on the san mai course. Ultimately though, no education is ever wasted,  so even if you don't have the time, money or patience for more whetstone work, you'll still have knowledge enough on what to do should your knives need a once over at home, as well as the professionally sharped blades you brought with you on the day!

On another note, If we don't quite manage to get everything you'd like done in the day, then feel free to leave your knives, whetstones, sharpening tools etc. with us and we'll get them sorted for you at no extra cost to yourself.

Courses will run from 10.00 - 16.00, and lunch will be provided (please let us know if you have any dietary requirements). Bring some clothes you dont mind getting dirty, and ideally some method of safely transporting your "brand new" knives home once they're nice and sharp, as well as sturdy work boots or steel toe caps. The rest of the relevant PPE and equipment will be provided on site.
