Aogami etched Gyuto

This light and nimble build is a continuation of the concept of cladding high carbon core steels in a protective layer of nickel and wrought iron, to maintain a balance of hardness for the cutting edge, and toughness for the body of the blade, in turn giving maximum versatility. Last thing you want is a mega brittle knife after all! The blade was then etched to bring out loads of contrast between the dark core steel, the shiny strip of nickel and the flavoursome wrought iron cladding.

Aogami No.2 is not a steel I work with commonly as it can be pretty hard to source, so this gyuto would make a excellent pick up for anyone looking to add a blade with a rarer core steel to their collection. If you like some forged texture through the spine, then this ones also for you!

• Aogami no.2 core steel, clad in pure nickel and wrought iron

• Usable dimensions of 170x48mm, with a total blade length of 184mm

• 131x23x28mm (LxHxW) ash and bog oak handle that gently tapers in towards the heel of the knife. The bog oak cap is carbon dated to 3300BC

• Distal taper through the spine from3-0.5mm just before the tip
