Elm and Ebony Gyuto
This whetstone ready gyuto was a super fun build and a personal favourite from some of the knives put together for the Hereford Indie Food and Ludlow Food festivals.
The idea behind the build was to have a super high carbon core steel, clad in wrought iron from Hay-on-Wye, with a protective layer of pure nickel in between the core and the cladding. The pure nickel acts as a barrier against carbon migration during the forging process, which in turn enables the core steel to maintain as much hardness as possible for premium edge retention.
This gyuto would make an excellent pick up for anyone looking to add a 210mm workhorse to thier collection that you could maintain using whetstones.
Stats:
A 135cr3 core, clad in a layer on pure nickel and wrought iron
Usable dimensions of 210x51mm, with a total blade length of 226mm
127x27x24mm (LxHxW) ebony and elm burl handle that gently tapers in towards the heel of the knife
Distal taper through the spine from 5-1mm just before the tip
Total weight of 223g
