Stainless pairing knife
Billed as a pairing knife, you wouldnt have any issues using this as a steak knife for the dinner table either. Stainless steel is a good choice here (in my opinion) as pairing knives often get used for the dirtiest jobs in the kitchen, jobs that carbon steel blades generally dont appreciate that much due to the added maintenance involved in making sure they dont rust.
The stainless steel in this knife is known as VG10 - a high carbon stainless commonly used in mass produced Japanese steel blades. The high carbon content here means you shouldnt have too much trouble keeping the knife sharp.
